Sunday is one of the best coffee days of the week. Every one of our shops is dark. Our teams get the day to rest, to be with the people they love, and to worship if they believe.

Every product carries our name. We pursue excellence through quality ingredients, consistency, precision, and continual improvement, because every detail matters.
In practice — Our own roaster. Our own kitchen.
We could buy our beans roasted and our pastries baked. It would be simpler. Instead we hire for two more crafts, hold two more standards, and own every failure ourselves, because it is the only way to control what ends up in the cup.

We care for every space, tool, and resource entrusted to us. A clean, organized, well-maintained environment reflects excellence and honors our guests, our teammates, and our community.
In practice — Rooms built to be stayed in
We choose the materials. We rebuild the buildings we take over instead of inheriting them. We build the patios. A shop should be somewhere you linger, not somewhere you pass through.

The math says a seventh day is money left on the table. We've heard that. We close anyway.
Six days we go hard, early mornings, long weekends, full rooms, every shop. Then we stop. Not because Sundays are slow, but because rest was God's idea long before it was ever a business decision, and we'd rather be obedient than optimized.
Here's what the spreadsheet misses: the six days are better for it. Our teams come back rested. They come back having actually seen their families, and church if that's where they were headed. That's where the joy you feel at our counter comes from, nobody can pour out to others what they never received.
